The subtle woodiness of mesquite honey was teased out with the velvet mesquite smoked whiskey barrel it was aged on. Whiskey, honey, notes of sweet tobacco, and unmistakable desert campfire. Sonoita might just be exactly the opposite of The Big Apple, but what it lacks in size it makes up for in delicious barrel aged meads. Well, technically a cyser (mead and cider blend), The Little Apple was fermented with local wildflower honey and green apples courtesy of the Rowley family of Sonoita. The high alcohol blend of apples and honey was already a little boozy… but then we aged it on an Elgin Distillery Straight Bourbon barrel for 6 months. The result was mind-blowing, definitely nothing little about this one.
